I made this last night and it was pretty great. the only change I would make next time would be to saute the pancetta in oil for a few minutes before adding the vegetables - it looked a little grey to me since it didn't sear at all. really good though!!

I made this last night and it is now earmarked as a go-to winter recipe, especially on cold, winter nights in Upstate New York! I followed the recipe exactly with the exception of the swiss chard as the grocery store was out -- I used fresh kale instead as the store had a steady supply - it was perfect. I also chose beef stock as opposed to beef broth which perhaps added a richer base. This was a very easy recipe and I will be making it again.

This was excellent! Squeezed lemon juice over soup once in bowl for extra flavoring and finished with shredded Rosemary Asiago cheese - delicious!!

This was very easy, savory and delicious. I made exactly as the recipe called except used grated Parmesan and added a hand full of rotelle. Great for a cold night by the fire.

Easy and delicious. I made it almost exactly as written and it turned out great. Only changes: I didn't have pancetta so I skipped that, and threw in a handful of grated parmesan instead of the rind. Will definitely make again!

I LOVE this recipe! It's so easy to swap your favorite veggies to suit your preference. This is my go-to winter soup recipe. I usually double the ingredients and bring it to work all week...

made this soup tonight and it was wonderful. to make it more hearty i added cooked ground beef. i used chicken stock (don't care for beef stock, and a lot more than what was called for as i like my soup with a lot of broth. also added a little bacon drippings for extra flavor, 2 cans of beans, pureed 1 of them and added the other whole, and also some italian seasoning. left out the onion, don't care for it, but did add in some onion powder. we all really enjoyed this soup on a cold night in texas. oh, and i used baby spinach since i couldn't find the chard. wouldn't recommend baby spinach, as the soup cooked it became almost non-existant. will definitely be making this again!

Hubby and I just made this tonight. It's very hearty and good. We made a couple of differences. We used hot Italian turkey sausage instead of pancetta and we used spinach instead of swiss chard since the grocery store didn't have any. I also used an entire can of beans to puree and another whole can to just put in the soup. It was very filling and tasty.

This soup vanished so quickly. My hard to please husband and kids said it was very tasty. We have a winner here. Loved it absolutely. Did not have swiss chard but added golden beet leaves, still delicious. Thank you for the recipe, Giada.

Great! Loved it!
Will give the Pancetta a minute alone next time and added some good Parmesan instead of the rind.
