I personally think this needed more liquid...about 2-3 cups more of water and stock. This might be because I added more "stuff" to mine. That's the one great thing about this recipe - it lends itself to any variation you can dream up based on your personal preferences. For instance, I added the aforementioned liquid (water, veg or chicken stock work well, and an extra can of beans (garbanzo, kidney, etc., chopped zucchini, some leftover fresh green beans and 1/2 cup small pasta (ditellini or shellsfor the last 20 minutes. I also think this recipe absolutely needed extra seasoning such as 2 t Italian seasoning (or an equivalent mix of your favorites...oregano, basil, thyme and some chopped fresh parsley. A lot of chopping so it takes a bit of time, but don't worry about a perfect dice or chop, it all comes together in the end. The rest is very easy to pull together and highly recommended.

This soup was fantastic. I absolutely loved it. It is very flavorful, and I am a tough critic. The rosemary is very distinct in the broth, as is the parmesan. It was not too salty at all.
Modifications I made:
used kale instead of swiss chard b/c that was what was available at the grocery store. Pureed one entire can of beans with some stock (I prefer more body to my soup, and added a second, unpureed can directly to the pot. Also used two cans of tomatoes because I prefer more tomato.
Otherwise, I followed it entirely and will make this regularly. A wonderful way to make greens. A perfect, cozy winter soup!!! Can not say enough about how delicious this recipe is!

This recipe is the best best best recipe for minestrone! It's absolutely delicious and filling. My suggestion: Don't substitute or change anything about this recipe. Follow it exactly, and you'll have a perfectly balanced soup each time. My family loves this recipe and asks me to make it all the time. Thanks Giada!!

Giada's recipes never disappoint. This soup is so tasty and you know it's good for you just by looking at it. The broth is SO flavorful because of the onion, garlic, and rosemary. I doubled the recipe so we'd have some for our lunches next week. Thanks Giada, you're the best.

This was super easy to make and didn't take a lot of time. I added garbonza beans as well and left out the cheese rind since my local super market doesn't carry it. Instead of swiss chard, I used bok choy which worked really well.
