I served this soup at a Rose Bowl party, and it was a great hit! Recipe doubles nicely. I agree that there is a lot of prep work, but it comes together quickly once all the veggies are prepped and chopped.

The prep time was longer but the soup was great. I used swiss chard the first time, and spinach the next. Each were good with slightly different taste.

I have been watching Giada cook on the network for a while now and I just love her show. Her recipes are real honest good eats. (Sorry AB! The prep time for the ingredients took me longer than expected but everybody in my family & church group are all asking: "When are you making more of that great soup?" (Winter Minestrone The only thing I "splurged" on was getting real good pancetta. Otherwise, everything was relatively inexpensive. I doubled up the recipe and still the soup was gone in a few days.

this is an excellent soup! didn't have pancetta so I used prosciutto and it turned out great. I might put more beans in it next time. but the flavor of this soup is very good.

What an easr and flavorful soup! As long as you find the swiss chard(i'm sure you can sub. a different green and you ude the parm. rind, this soup can be whipped up in a snap. Tasty and hearty. Great for those cold winter days. A WINNER!

I thouroughly enjoyed the soup,,although my family are meat lovers and they would have liked some meat in the soup..I think it is a wonderful wholesome soup,,especially for the cooler and colder nights..

This soup is perfect! Deep, deep flavor and healthy too! You will need a big pot for all taht chard, but it will cook down. I mistyped the recipe and used 6 oz of parma rind instead of the 1 oz in the recipe--didnt hurt a bit! (i'm not sure you really need the rind anyway--be sure to sprinkle lots of grated parma when you serve-along with crusty bread to dunk in the soup. Her recipes are consistently good.

My husband is Italian and very particular about what tastes good! Well he thought this dish was WONDERFUL! The entire family loved it!
