what a great recipe! i have made this twice with some modifications. the biggest reason for the modifications was because we needed something a little more filling for this to be an entire meal. we doubled the cannellini (pureed about half, doubled the diced tomatoes and used a package of loose hot italian sausage instead of pancetta. we also added some pasta (wagon wheels to the soup - we probably used too much - i think 1/4-1/3 lb is plenty. the first time we tried sliced sausages - we got much more flavor using the loose variety. this barely needed any seasonings and we loved it. i did end up using more broth - just because we added so much more 'stuff'.

This is a fantastic, super easy, one pot recipe. I've made it it 3 times now this fall, twice with chard and once with bagged, pre-cut/washed escarole. It is better with the chard. Sometimes Wegman's sells parmesan rinds, sometimes they don't so I've used the rind once. It's hard to say how much depth it added, maybe a little? Each time I just added a can of cannelini beans instead of making the puree just to make it easier and have also added 3/4 cup of macaroni for a little extra heartiness. Bottom line, this soup comes out awesome every time. Great recipe.

Giada, you never let me down!! This recipe was wonderful! I made it today in honor of the October snowfall. I followed your instructions exactly, even added some chopped leeks and yellow squash. Loved it! This will be a regular for my family this Winter.

This was amazing! I used fresh organic herbs and vegetable. It had a great consistency, not this thick. I will will definitely make this again!

Excellent recipe! Tried it yesterday and was just perfect, I left out the meat being a vegetarian but don't think my husband missed it.

This soup is one of my "go to" favorites. I've made it many times and have had great results. I've substituted fresh spinach for the Chard and bacon for the pancetta from time to time and it tastes delicious either way. Just don't skip the rosemary! It adds so much.

This soup is so delicious! I followed the recipe exactly. I usually make dishes according to the recipe first and then change it up the next preparation as needed or to make it my own. This recipe is perfect in my opinion. I'll be making it often without changing a thing! Don't skip the parmesan rind, pancetta or fresh rosemary. Don't skip anything, it's soooooo good! I'll be sure to make a double batch next time.

This recipe deserves 10 stars! I used pepper bacon instead of pancetta and added homemade croutons, shaved parmigiano-reggiano, and chopped basil to finish it off. Most tastiest soup ever!! It tastes even better today. I took the leftovers for lunch.
