Interesting soup. Made exactly as written except for increasing cheese rind. For me, the flavor of the rosemary overwhelmed the other ingredients. I have an outstanding minestrone, thick and hearty, that everyone raves about. While this is a nice soup it doesn't stand a chance against my old tried and true

I used fire roasted diced tomatoes with green chilies because that was all I had. It added great flavor to what might have been bland otherwise, but was too spicy for my kids. I also threw in extra veggies I had left from the garden. Yum!

I have made this twice in 4 days, both times for guests. We all enjoyed this soup immensely. My young daughter loved "the cooked lettuce." I used bacon because of the cost, so I think it's necessary to chop that, brown it, then remove it and use the fat to sauté the vegetables. The soup got better after sitting for a day, so if you can, make it in advance.

This soup was awesome. It got better as left overs too. I enjoyed the thickness and flavor of the soup. I will make it again!

I can not tell you how many times I have made this soup.
My family loves it! I make extra to share with co-workers and family.
It has gotten to the point they ask me when I am making it again!
Wonderful flavor and don't forget the cheese rind, makes so much
difference! I have started to add it to other soups. Have to get it from a local
cheese market, or Whole Foods. My grocery store doesn't have it available.
But it is so worth it. Enjoy and Thank you Giada!!

This is so delicious and satisfying that I make it about once a week in the winter. My boyfriend always asks for it if it has been to long, too.

I make this soup several times a year, and the results are spectacular every time. It also works well with thick cut, uncured bacon. Delicious, and the leftovers freeze quite well.

I discovered this recipe at the beginning of the winter and made it all winter long. Hubby kept requesting it. Following this recipe, I also felt like I got a great general flavor base. I use it all the time.
