Over the years I have made MANY soups, but this one is one of our very favorites. One of the things I love is that I can change it up, leave out the meat, use veggie broth and make it vegetarian, OR I can use Kale/Spinach instead of the Swiss Chard. The original recipe we love the best. I always make a double batch and set up individual containers with the left overs and freeze them for later. It's nice to be able to come home and just pop them in the microwave : We love it with a nice fresh baked bread :

I served the pancetta on the side since I was serving both vegetarians and omnivores. Also did spinach instead of the swiss chard (added at the end since it cooks so quickly, cooked quinoa pasta (I'm gluten-free instead of the potato and thyme instead of the rosemary. Yummy!

Deee-licious! I made this tonight and everybody enjoyed it and got seconds. I added additional veggies, such as mushrooms, yellow and green squash, fresh tomatoes (instead of canned, kale, collard greens (Swiss chard unavailable and two cans of of beans. Also, thanks to other reviewers, I added hot sausage instead of pancetta. I really enjoyed making, smelling, and eating the minestrone. I will definitely keep this one in my recipe box. Thanks Giada for making such healthy delicious dishes!

This was great! I followed the recipe except for the carrots. I omitted those. That's just my personal preference. This recipe is light but yet filling at the same time. I attribute the satiating part to the potatoes! It was great and it is definitely a new staple for my family.

The flavors in this soup were wonderful. Although, I'm not sure what I did wrong, but it was more like a stew than soup, barely any broth at all. When I added the can of diced tomatoes and it said boil, I didn't have enough liquid to boil, so I added another can. Still not enough broth, so next time I may add another can of broth. Probably user error though. I didn't have a parmesan rind, and the flavor was still good. Also added a bit of thyme. I will be making this again. Hopefully I figure out what I did wrong. It's not the recipe, as it was still wonderful!

Just made this soup for the first time tonight, and it is wonderful! I did modify the recipe slightly - omitted the chard (b/c I didn't have any, and added in some basil, oregano, and broccoli/carrot/cauliflower slaw. I can't wait to enjoy it for lunches throughout the week!! Thanks Giada!!
