    This soup was so good I made it twice in one week. Love it! So easy. I used Chard the first time a Kale the second time. I also used a bit more broth. Perfect for lunch or dinner. Love you cooking Giada, so simple and tasty!

    THIS WAS THE BEST RECIPE EVER!!!!!!!!!! I took the advice from the other reviewers and added an extra can of beans and added the whole box of beef broth and best thing yet.... SPICY SAUSAGE!!!! And I cubed that and added it in there with the rest of the vegetables. This was the best soup for such a cold day and it was nice and harty just like I like it!!!!! THANKS GIADA!!!!!!!!!!

    Fantastic recipe! I might add a little more beef broth to stretch it out for another bowl or two. I also added in more beans because we love beans in our family.

    This was delicious. My version of the recipe didn't include beans (because the pot got so full from the other ingredients and I subbed in turkey instead of pancetta. Hearty, healthy and delicious.

    Love this soup! Followed it to the T tasted it and then added some cayenne pepper...maybe because it did not go over 32 degrees today? another great and easy recipe! Oh, i just added liquid smoke to the soup and it makes it even better. Thought of it when i saw the show again when she put it over the fire..Thanks!

    I LOVE this minestrone. I did change a few things, and added another element to the minestrone that I think you MUST try. Based upon previous reviews, I used two potatoes, two cans of cannellini beans (purree one, use the other in the stew, 32 oz of beef broth (needed to use whole container, 1/2 tsp. red pepper flakes, and a 28 oz can of diced roasted tomatoes. The parmesean rind did not really melt down, and while it was cooking I used two forks to help break it down. Next time, I might cut it into chunks and grind it up in the mini-chop food processor. While eating my first bowl, I felt something was missing to the flavor mix. I wanted a brighter flavor out of the soup. I mulled it over for about an hour, and then had another bowl and squeezed a small lemon wedge into the soup in my bowl. It then was perfect!!! I don't think I would recommend adding it to the whole pot as it might not work as well. Add it to your bowl just before you eat!
