Loved it... even in the summer! Just made it last night as a quick, healthy meal after a weekend of indulging on too much bbq and it fit the bill perfectly. I didn't bother pureeing the beans to save time, and left out the pancetta to keep it meatless, and it was still delicious, especially with a hot, crusty loaf of sourdough bread! I also added a handful of sliced mushrooms that needed to be used up. It makes for a delicious lunch to take to work the following day.

Love this recipe! I use chicken stock instead of beef broth and I also use half a sweet potato in addition to the regular white potato...and instead of rosemary I use fresh thyme...it is delicious!

Easy and fabulous. Didn't have swiss chard so substituted fresh spinach. Beautiful soup.

Saw this one on TV and it looked amazing so I decided to try it. Had to go to a Fresh Market store to get pancetta and swiss chard. I didn't have a parmesan rind so I just threw in a bunch of grated parmesan cheese, probably more than I should've. I'm sure the rind adds a better flavor, but this worked good enough for me! I made it a second time without the pancetta and used kale instead of swiss chard and also a lower quality parmesan cheese. I have to admit, the first batch was better! I also wouldn't mind adding more beans next time. I have also experimented by adding some noodles, but the soup becomes a little too thick!

i must have made this 30 times by now! been making this for a few years now every winter. it's the best healthy dinner on a cold night. i like to chop the veggies into bigger pieces, not too small. and i don't bother pureeing 1/2 of the beans, i just put all the beans in whole. when i don't have a cheese rind, i'll just add a bunch of grated parmesan into it, it turns out the same. make sure you wash the swiss chard VERY well individually, i've made the mistake of washing it too fast, and had gritty sand in the soup which is not pleasant! i am actually making this again tonight! my husband loves it!

Every Sunday I make some sort of soup for the week. I saw this recipe and realized I had just about everything it called for already in the house. I followed it exact except I used chicken stock instead of beef. It was amazing! It is way too good to keep only for Christmas!

Delicious!! The flavors in this soup are wonderful and it is simple to make. I had never cooked with swiss chard and was pleasantly surprised by it's tasty flavor in the soup. My husband enjoyed the soup too and even got up for seconds! Will definitely make again and again.
