This soup was amazing! I made it twice, the second time I used a 28 oz can of diced tomatoes instead of the 14.5 can and it came out even better [I think the 14.5 oz can might even be a typo in the above recipe...? When I watched the episode I swear I saw Giada with a big can instead of a small one. I dont know though!]. My mom said "this is the best soup I've ever tasted." I think the parmesan rind makes the soup. Thanks Giada!

This was incredible and I am NOT a minestrone fan. I usually do not have Parmesan Rind on hand as my husband does not like Parmesan cheese. So I bought a hunk of cheese with the rind just for this soup. I wonder if I can just cut a 1 oz hunk of the cheese and add it to the soup rather than using the rind, or can I reuse the rind (after freezing for storage, of course? I hope someone has some ideas. This is an awsome recipe that I definitely will be making regularly.

Incredile! So much better than classic minnestrone. My husband prefers a little meat so I added a 1/2 pound ground beef just to give him his fix. Other than that, I have parm rhind always in the freezer so this was a great excuse to use them. My firneds who joined us, loved this meal so much. Thanks Giada!

The thing I liked best about this recipe is the tip to puree 3/4 C of the beans to add to the soup and leave the rest whole. It added a nice texture to the soup and it's a technique I'll use for other recipes.

I loved this episode so much I watched it more than once! This soup looked very tasty so I made it and it was a HIT with everyone! So hearty, so simple, so easy, so cozy, so GREAT! I'm making it again tonight.

Perfect soup! I made this soup to eat on Christmas day. We had the family over and had a big lunch; made this a few days before to serve a few hours later when everyone seems to get a bit hungry! I made a few changes, I added less beans since I do not like beans, and pureed most of them. I also cut the tomatoes back by a bit since my Grandpa doesnt care for them. I did add a few more potatos, carrots and celery! More swiss chard would have been great, it was awesome in the soup! I also made it two days in advance, and it held up great in the fridge and through re-heating! I think it almost got better! So simple to make as well, it is now our family favorite and we have made it twice since Christmas and all the family asked for the recipe!

I just made this soup, and it is fantastic! I did change a few things....first of all, I used bacon instead on pancetta and I let it get pretty crispy before I started adding the vegetables. As someone else suggested, I used 2 potatoes. I also used 2 cans of beans and kale instead of swiss chard. It is easy to make, and I will definitely be saving the recipe!
