    I could only find swiss chard in a Wholefoods store and it took my hubby and I both to do all the prep for this, chopping, chopping, and chopping, lol. But it was oh so worth it. Used a little bacon instead of Pancetta and two potatoes instead of one. It was superb. We oohhhed and ahhhhed all through eating it.

    This was so delicious! Of course, I added 2 extra cloves of garlic. I didn't have a cheese rind and it was still so tasty!!

    Lots of flavor!
    Made this today and loved the flavor! I bought kale instead of swiss chard, but Im sure it was similar in taste. My husband rather I leave it out all together. I watched her make it quite a while ago but didnt make it till today. I followed the printed directions but next time I think I will fry the pancetta first then add the vegatables. I prefer my pancetta/bacon crispy. (Maybe she did it that way initially, I dont remember and as we know what they do and what is printed is not always the same I only had grated parm and went ahead and used that but I think the rind would work better. Well make again for sure.

    This is so very good. It is easy to make and feeds a lot of people. It is the best minestrone soup recipe I have made. Have made it many times for various events and all have commented on how good it was.

    I am making my second batch tonight! This recipe is amazing, filling, warm and delicious. I did the recipe exactly as recommended and I would not change a thing. Serve with some crusty bread for dipping and a side salad and you have a great meal! Thanks Giada! You are my FAVE!

    It was really delicious, even though I omitted the pancetta! I found it funny that I cut off my parmesan rind while my parmesan was still in use, but it did add a lot of flavor. I was gentle with my rosemary sprigs, and not too many of them fell off, but you could definitely taste the rosemary in the soup, in a good way. I couldn't find swiss chard so I used fresh spinach which still held up nicely. It was really yummy, I will definitely make it again, and next time I will double the recipe for more leftovers to freeze!

    This soup was such a bit hit for Christmas dinner. We were very casual this year with beef sandwiches and the winter minestrone soup to compliment the sandwiches. For anyone who has complained of the rosemary sprigs in the soup, I have a suggestion. I wrapped my rosemary sprigs in cheesecloth and let that cook in the soup simply for the flavor. Then you just take out the herbs, all of which remain in the cheesecloth. This gave us all of the wonderful flavor of the rosemary with none of the chewy pieces inside of the soup. I did use a thicker cut of bacon as a substitute for the pancetta because of the cost, and I used spinach instead of the swiss chard because I couldn't find any in the local markets. Also, Whole Foods sells just the parmesan rinds. I bought 3 good size pieces for under $3. Looking forward to the leftovers for dinner today.

    This recipe was quick, easy and absolutely delicious. I didn't have pancetta, so I substituted 6 slices of bacon cut into slivers. It was our first time trying swiss chard, and it won't be our last. I'd like to try this recipe using other "new to us" greens too!
