Great soup! If you are afraid of the rosemary, tie it in cheesecloth for flavor then throw it away before serving. I also used kidney beans (pureed half, Italian sausage and some fresh basil. Nice result.

This soup was awesome! Great flavor. If you have kids, you may want to use less Rosemary or omit, to cater to their taste buds.

This soup was just wonderful! It was easy to make and the ingredients
in my opinion were packed with flavor. My entire family really enjoyed it! I've made many soups before and I think what makes this one special is that there is no pasta to soak up all the broth, so there is never any need to add water and loose all the original flavor when heating leftovers. Just a real winter warm up yummy soup! Excellent, Excellent, Excellent!

Great soup for a cold day. I made it exactly as written, but added a healthy splash of red wine. I think it would be fantastic with kale, but enjoyed using the chard since I don't typically make it. Also agree with another reviewer that crumbled sausage would be a great substitution.

This soup is amazing. I have never loved the smell of minestrone so was a little leary on making it. It is amazing. Like super amazing. I am not sure I have ever had Swiss chard either and it is perfection. I am definitely saving this recipe. Thanks to Giada!

We made this last night and it was delish! Used chicken broth instead of beef and added extra garlic. Used shredded parmesan since I didn't have a rind - and it worked. This will be a new staple for us - SO GOOD!

The best minestrone recipe I've found. A few modifications that were more suitable to our taste. I used fresh spinach instead of swiss chard. I also substituted chicken broth for the beef as I felt the beef was overpowering. The parmesan rind is a must! As for the rosemary sprig, I don't care for large pieces of it in any dish. I always mince it prior to adding it to any recipe. This has definitely become a family favorite.
