OMG! Usually I am not a fan of minestrone but my hubby & I made this soup today and I LOVED it! We added kidney beans & small wagon wheel pasta. Also used dried rosemary and fresh shredded parmesan instead of a rind. My husband had gastric bypass two months ago & this was a real treat for him. It was so easy to make too.

Heavenly. Delicious. Healthy. It was the Swiss Chard, parmesan and rosemary that sold me. It's cold in San Francisco and this soup brought warmth and comfort. I followed the recipe exactly. I wouldn't change a thing. Thank you, Giada.

I'm home sick today and was able to watch the Christmas at Home show. I had just about everything so I threw it together and boy was it tasty! I halved it since I'm the only one in the house that likes minestrone but still used a whole can of beans to make it heartier. I, like others, only had spinach and I added some squash (since I was using up leftovers. I wasn't sure about the rosemary (I used just half a sprig. but it actually gave it a good flavor. It's a great alternative to the standard chicken noodle or chicken and rice soup for days like today.

After seeing Giada make this on her Christmas special, I had to have some! I could not find the Swiss Chard so I substitued Kale. I also added more broth and doubled up on the beans and tomatoes. I used fire-roasted tomatoes which gave it a great taste. The pureeing of the beans gives the soup a rich taste along with the parmesan rind. I let the soup cook longer because I like my vegetables a bit more tender. Great recipe, easy to make and I can't wait to serve!!!

So Good! I substituted fresh spinach for the swiss chard and crumbled sausage for the pancetta. I also added 2 cups cooked pasta for substance. Everyone loved it! Do not omit the rosemary!

Delicious!!!! This was easy to make and so good. I didn't have enough swiss chard so I added some spinach and increased the broth by 4 ounces. Pureeing the cannellini beans and adding the Parmesan rind made the soup creamy with a hint of cheese flavor. My family loved it and this will be a winter staple in my home.

This is the BEST soup ever!!!! I made this last night for my boyfriend and he loved it. I think the key is the cheese rind. Makes the soup taste so creamy and nutty. I did remove the rosemary after 10 mins while the potatoes were cooking. The flavor could be a bit overwhelming for some people. Thanks Giada!!!

I loved flavor of this broth. It was an exellent soup. My only issue was with the rosemary. By just adding the rosmary sprigs, all the pines fell off into the soup. ( I know that was the intention, but i really didnt like having huge pines in my soup, they were hard to chew and really strong! Nxt time I will just chop alittle rosemary, instead of adding em whole. Other than that I really loved the soup. Thanks Giada!

Excellent soup! Substituted Swiss chard with kale and pancetta with a pound of ground beef. I used 5 cups of chicken stock because 28 oz just wasn't enough for me.
