This was a great base recipe for a great soup..I didn't have the Swiss Chard so I substituted chopped spinach. It was great...Thanks Giada for another fantastic meal.

I saw Giada cook this recipe today on her Christmas special. It looked really good on tv and I've been craving some good soup so I decided to give it a try. It is a very hearty vegetable soup, all the veggies are delicious and I especially like the swiss chard. The only thing I would do if I cooked it again would be to add more beef broth, I like my soups a little more on the soupy side. It also goes great with some ciabatta that you can toast in the oven.
