    Great flavor, even better the next day. Best thing is, it's simple common flavors. Great addition to the recipe box to replace a typical boring veggie side dish. It's a keeper.

    Awesome. I can not eat enough of these veggies. The flavor of the basil and the mint are so good. Perfect compliment for the fish we had tonight.

    Made this for a family dinner (12 people. Only one person did not enjoy this dish, but thought she might like it warm instead of room temperature. I would never have thought to fry zucchini or carrots, so it was a fun new experience. I did have a lot of splattering while frying the zucchini and carrots, which may just be my own inexperience. One of the best features is that the dish is prepared a day early, so I had more time to focus on the other dishes for that meal.

    My family voted to leave out the carrots next time and do only zucchini. I have had this before with only the zucchini and it was good so will try it that way with Giada's recipe next time.

    Ate this dish over the holidays, my sister made it. Was a complete hit for the entire family. I can't wait to make it and especially...eat it! The mint and basil combination is just so yummy.

    I love this dish, but ended up throwing some away because we just couldn't eat it all fast enough. I'll cut the recipe in half next time. Love the flavor, and it's sort of exciting to know that the longer it marinates, the tastier it will be.

    Added cauliflower to the veggie mix and put it on an antipasto platter. Not only does it look good, tastes good too!

    we love zucchini and also carrots,but there was a very awful taste about this dish.we ate it but i would make it again.

    I love this recipe. I have never been crazy about zucchinni but done this way, it is really delicious. This is a very healthy dish and I took it to work for a light lunch side dish.
