I used store bought graham pie crust - little ones -6 to a package. one recipe does 9.
didn't need to beat the mixture as much as stated. BUT after they came out of the oven I sprinkled sugar on top - instead of the recommended topping and hit it with a torch!
great!

This is the best Key Lime Pie, I use the key limes whenever I can get them but have used regular limes. They seem to be harder to juice but I put them in the microwave for about 10-15 seconds to soften them and that seems to work. My family just dies for this pie.... Thanks to Giada for making it on her show but really more thanks to Joe Stones Crab Restaurant for sharing....

This is the greatest key lime pie I have ever tasted. Does anyone know how this would taste without eggs? I want to make key lime shooters in shot glasses but the glasses aren't oven safe. Any ideas?

The fresh key limes I had available did not yield very good zest or juice, so I substituted fresh limes. Also, I used Anne Burrell's almond crust from her Lemon Curd Tart recipe.
The result was excellent. Probably not quite as sweet as the graham cracker crust version, but with the smooth whipped cream on there....oh man it was good!

Followed the instructions exactly, and got a beautifully set, delicious pie. This is the best key lime recipe I've ever tried, with just the right balance of sweet and tangy, and the crust is fantastic.

AMAZING!!! I made this tonight and everyone absolutely loved it. I didn't use the lime zest and I squeezed the key limes using a lime squeezer. I am a huge fan of the crust and recommend this recipe!

Except for the lime zest, this recipe is the EXACT same as the one on the side of Nellie and Joe's Key Lime Juice. I made the crust and pressed it in a tart pan. I melt dark or semi-sweet chocolate and then put it on top of the crust and then put the filling in the pie. This is my recreation of the frozen key lime pie slices dipped in chocolate that I had in Key West. So good and has a surprising wow factor for my guests.

I have been making this recipe for years. It's so nice of Joe's to make this recipe public. I've never found a key lime pie that even compares to this one -- and I'm from Miami, so there are a lot of key lime pies around.
