Ginger Beurre Blanc

Ingredients
  • 1/4 cup chopped shallots
  • 1/2 cup dry white wine
  • 1/2 cup white wine vinegar
  • 1 tablespoon grated fresh ginger
  • 1 stick butter, chilled and cut into 8 pieces
Directions
  • In a saucepan combine shallots, wine, vinegar and ginger and bring to a boil. Reduce heat and simmer until liquid is reduced to a syrup. Swirl chilled butter into syrup one piece at a time. Adjust seasoning with salt and pepper. Serve immediately.
