    My family loves gingersnaps and although I have a trusted recipe that was passed down through generations, I'm always testing new recipes to see if I can top it. This recipe has replaced my family recipe and has become a regular in my holiday cookie baking. The cookie doesn't "snap" like some gingersnaps -- it's crispy on the outside and chewy on the inside...a very nice contrast! If you like a spicier cookie (hot, you can add a little cayenne to "kick it up a notch!"

    I've retitled this recipe to remind myself that these cookies are a PUNCH of ginger goodness. If they are too flavorfull for you, cut the candied ginger in half or omit, otherwise choose a different (more mellow recipe. Ginger lovers have asked me for a copy of this great recipe!

    I usually opt for chocolate when I want something sweet, but these ginger snaps are SO GOOD, I find myself bypassing the chocolate for these. I get RAVE reviews everytime I bake them. The dough is a dream to work with too. Put this in your cookie repertoire NOW!

    As an unabashed ginger lover I have been searching for years for the perfect ginger snap and Eureka! I have found it. These cookies have the perfect balance of the bite of ginger and the spicy molasses that is ginger snaps. I made mine with home made candied ginger but I imagine as long as your candied ginger isn't dried out too much they would turn out excellent.
