The cookies tasted great; however, I had problems cutting them out as the dough got really soft fast.

I made these cookies over a week ago and they are still soft. The recipe makes perfect cookies that are very flavorful! My children and guests really liked them.

I made these Xmas cookies for my Taiwanese stduents, the box is empty in 2 minutes.
My mom's friend had a bite of it and ordered for more the next day. Million thanks Rick Rodgers who provided this wonderful recipe.

I am a novice as it comes to baking, and I found it very simple to make and extremely delicious. However, if you don't have a piping gun, using a ziploc baggie. Put the frosting in the bag and cut off one of the bottom corners. Squeeze the frosting through the hole and it works just as good. Enjoy!

really easy. i tried both thick and thin. i like thicker better....since i prefer moist soft cookies and it was easier to work with. thinner cookies had the tendency of breaking apart sometimes since it was so fragile trying to get it to the baking sheet. i used powdered sugar instead to roll it out..tried suggestion of parchment paper and saran wrap on top while rolling out and i had no problems of sticking whatsoever. didn't try icing yet but will try tomorrow and will re-rate this again when i do.

I SUCK at baking.. if you want to know how bad I'll just say that I burned cookies that were already pre-made, and pre-shaped. So I thought surely I couldn't make my own dough AND bake it!! But these cookies came out SOOo good that I know I will be keeping this recipie, and I will make it a tradition to bake them every year. I don't really like traditional "spicy" ginger-bread.. so I omitted the all spice and cloves.. (I kept the ginger and pepper, but the flavor was so mildly sweet it was very addictive! The texture was moist and plump, almost like a piece of cake! I made 2 batches of the cookies, but the only one of the frosting yet there was still LOTS of frosting leftover.. just to let you guys know, but other than that HIGHLY RECOMMENDED!
