    The stuffed duck looked great, but I get sick at the smell of goat chees. Can someone suggest a substitute cheese that doesn't have such a strong or musty smell.

    I watched this recipe being prepared and thought "this is a wonderful recipe, it makes sense." I'm not fond of duck, but I think I could become a convert, so I can't wait to make this recipe. I especially like the tip given about buying cheaper champagne because it could possibly have more sugar--having more sugar that would help enrich the champagne reduction. Thanks so much for this recipe.
