Ingredients

Crab Slider:

  • Water
  • 2 lemons, halved
  • 1/2 cup crab boil seasoning (recommended: Old Bay)
  • 1 large Walla Walla onion, chopped
  • 1/4 to 1/2 cup kosher salt
  • 3 to 4 live crabs

Mayonnaise:

  • 2 eggs
  • 1 clove garlic, finely minced
  • 1/2 lemon, juiced, plus more if needed
  • 1 teaspoon Dijon mustard
  • 1 cup canola oil
  • 1/3 cup chopped fresh parsley leaves
  • 1/4 cup chopped fresh chives
  • 1 teaspoon crab boil seasoning (recommended: Old Bay)
  • 1/2 lemon, zested
  • 3 tablespoons chopped shallots
  • Salt and freshly ground black pepper
  • 8 slider buns (recommended: Macrina)

Directions

Bring a large pot of water to a boil over medium heat. Add the lemons, crab boil seasoning, onion, and kosher salt. Add the crabs and boil them for 10 minutes. Remove the crabs from the water and put them into an ice bath. Crack the crabs and remove the meat from the legs and back sections.

Mayonnaise: In a food processor add the eggs, garlic, lemon juice, and Dijon mustard and pulse until smooth. Slowly add the canola oil pulsing until emulsified. Pour the mayonnaise into a medium bowl. Stir in the parsley, chives, crab boil seasoning, lemon zest and shallots. Fold in the crab, and season with salt and pepper, to taste. Keep the crab mixture chilled until ready to use. When ready to serve, mound the crab mixture into the slider buns.

BBQ Beef and Pork Slider:

  • 1/4 pound pork shoulder
  • 3/4 pound beef chuck
  • 1 or 1/2 (if very large) Walla Walla onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

BBQ Sauce:

  • 4 cloves garlic, chopped
  • 1 habanero pepper, seeded and chopped (wear gloves)
  • 2 cups ketchup
  • 8 tablespoons honey
  • 3 tablespoons Worcestershire
  • 4 tablespoons apple cider vinegar
  • 2 teaspoons garlic powder
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • 1 fresh apricot, chopped
  • 1/3 to 1/2 cup bread crumbs
  • 8 slider buns (recommended: Macrina)

Cut pork and beef into 1-inch cubes. Put the cubes into a stand mixer with a grinding attachment along with the chopped onion and green pepper. Grind the mixture and transfer it to a medium bowl. Season heavily with salt and pepper and put the bowl over another bowl filled with ice.

BBQ Sauce: In a medium saucepan add the garlic, habanero, ketchup, honey, Worcestershire, apple cider vinegar, garlic powder, mustard powder, salt and apricot. Bring the sauce to a simmer over low heat and cook for 5 minutes. Pour the sauce into a container and refrigerate until cold.

Preheat a grill or grill pan to medium-high heat.

Mix 1/2 of chilled BBQ sauce into the ground meat. Add the bread crumbs and form the mixture into 8 patties. Grill for 3 minutes per side. Put the burgers in the buns and top them with remaining BBQ sauce.

Put the crab sliders and beef and pork sliders on a large serving platter and serve.

    Loved the crab presentation, making home made mayo = WOW and that crab--- my mouth was watering watching Guy chow down I just couldn't hardly wait to make the crab slidders. I followed Jeremy's receipe with one exception... I couldn't find "macrina" buns. Needless to say the slidders were a huge hit, everyone wanted the receipe! Good Luck BLUE 22 will be watching you as you take down your next victory. JEREMY'S CRAB SLIDDERS ARE EXCELLENT!
