    I have tried a few different popover recipes over the years and Alton Brown's is the winner. Some called for more eggs, less flour or oil instead of melted butter. I wasn't satisfied with any of them. I followed AB's recipe exactly and came out with popovers that were crisp and dark brown on the outside while the inside was moist and chewy with a great flavor. Yum!

    Ok, this will be the 7th time i have tried to make popovers. I have tried ones that have you change the temp in the oven half way through, lowest rack ect. . now this recipe and still not rite. I follow them to a T and even bought the special pan. I dont know what to do to get them to puff bc they never do! HELP!

    I made half of the recipe.

    Only thing I changed was I used 1/4c of half and half and 1/4c of 2% milk.

    I used a popover pan with 3"depth.

    My batter was enough to fill one cup!

    It was delicious with my salad!
    Nice and ovesized and moist and chewy!

    I had to share the only one I made because it was so huge! LOL

    I'll only use this recipe for popovers!!
    Don't open the oven when cooking!

    Put on middle rack and use a popover pan its the best way to make these!

    Time was perfect for my oven !

    I have made popovers in the past with very inconsistent results. My cookbook doesn't tell you to make sure the ingredients are at room temp. It also only calls for 1 egg and has you cook at 2 diff temps.
    Alton's recipe turned out perfect. All 6 popovers were BIG and yummy

    The recipe is excellent. Mixing in a blender is a time- and effort-saver. The recipe puffs up well, even in my "multi-tasker" of an everyday muffin pan.

    Tentatively, I substituted dairy-free almond "milk" and soy-based "butter" for my dairy-allergic child in the second batch, and it came out well also. This batch was a bit lower and lighter in color, but nigh indistinguishable in taste. Yea!!

    I am so glad AB did this show! I had forgotten how wonderful popovers are. These are just wonderful! This is the best recipe I have ever used and they are SO easy to make.
