I've made this recipe countless times and they are absolutely the best wings ever! I get requests to make them all the time. Alton nails it once again.

This is the best wing recipe ever. If you soak it or any chicken for that matter in some water, salt, and soy sauce for at least two hours it makes the chicken even better.

Once again Alton Brown has knocked it out of the park. These are the best damn wings I have ever made and had (and I have been trying to make the perfect wing for years. I have deep fried, and baked but never boiled. By boiling the wings first for 10 minutes before baking, Mr. Brown shows once again that he is the King of how to break down connective meat tissues into "Good Eats".
I tried many different steam baskets, colanders, and strainer ideas (while getting my wife mad at me for using her good stuff but ended up doing what Brown does in the show. I spent a total of $4.00 dollars in hardware and purchased 3 folding strainers for $8.00 dollars a piece and has been the best kitchen investment I ever made.
You can almost double up on the hot sauce these are fairly mild but the chicken is great/fantastic.
Thank you so much for sharing your methods and ideas (and just in time for Football season.

BEST homemade wings I've ever had. Sauce was alittle mild for me but otherwise DELISH!!!!!

thease were very good. I did not watch the show but made for the MNF Opener and my kids devowered them... I doubled the sauce I think i will use use less butter next time ... i dont know why you need to cool but i know there must be a scientific reason.

These are the best wings ever! Even if I substitute another sauce, the wing prep is always the same. So much easier, and better for you, than fried.

Finally, "GREAT WINGS AT HOME"! I have been looking for years for a GREAT wing recipe, and it was right under my nose. I have made this twice now, and 3 times as I type. After the first time I did not use garlic in sauce. I am a garlic lover and will put it in just about anything, but it just took away from that cayenne pepper/vineger flavor I have been looking for. I used Frank's RedHot for the sauce to give it that traditional "buffalo wing" taste. Can't get enough of these wings and sauce!

I don't think I have every had such a contrast of crispy on the outside and juicy on the inside with wings before. Incredible taste and ingenious method of cooking. Love it

WOW...better than eating out. Crispy and easy cleanup. What more could you ask for? After the first batch I made I now have to make a couple batches at once for friends and family, and this way is so much easier than frying. After steaming and cooling, I can fill sheet pans with wings and they are all ready at the same time.

I've made these a few times for myself and for friends and they can't tell the difference between fried and these! In fact I've had people say they're better than some they get in restaurants. I love this recipe and the fact that they're oven roasted is such a great healthy option while still getting the crispy skin that makes fried wings so good. I'm not a big buffalo sauce fan, but I've tossed mine with some Sweet Baby Ray's Honey BBQ sauce and they were great, and a friend made some with lemon pepper and butter (to make it stick and loved them.
