The method of cooking the wings just made them so much better no smoke and they came out great. Crispy on the outside and moist on the inside and the sauce wasn't bad either.

We've tried wings without the "steaming/cooling down" method and today we follwed all the directions. The chicken has a much better flavor, the skin crispier and there was far less splattering while in the over. Overall a much better result when following this unconventional method.

Great recipe that is very simple. The wings are very moist, but not falling off the bone. Just perfect. After tasting the wings, we realized they taste almost exactly the same as a small town restaurant that is one of our favorites, but is 4 hours away.

These were THE BEST wings I've ever made! Totally worth the effort of steaming, cooling, and then baking. And baking verses frying…I love the fried taste but hate the fat, smell and mess it makes…these wings are BETTER than fried! PLUS, unlike frying, where I'm only able to cook about 6 at a time…I'm able to have 2 dozen cooked AT THE SAME TIME!!! Thanks, Alton, for giving me the recipe I've been looking for all these years :

My first time making wings - this was easy to follow and the crowd said they were nice and crispy - and the recipe was a keeper! I used frank's as well for the hot sauce and it worked great. I had smaller wings, so cut the cook time by 3-5 minutes on each side.

Alton, this recipe is no less spectacular than any of the other recipes you have so deftly and handily presented on your Good Eats show! Your sense of humor isn't bad either. The systematic approach you use to zero in on how to appropriately approach the food item to get the best possible flavor, with the least hassle, (regardless of the item you are preparing is always illuminating for me. Thank you again for another recipe that deserves high praise!

Wow, these wings were fantastic. I had been looking for a good non-frying recipe for chicken wings and this is it! I made them while watching UNC-Duke game and they were a hit. Crispy and tender, just the way I like them. Next time I may save a few and use a sweeter sauce for my daughter. BTW, Frank's has a thicker sauce now which really sticks to the wings. These were so easy, just remember you have to refrigerate them for an hour....totally worth it!

These are delicious! Though they do seem to dirty up every irritating-to-wash dish and utencil in my house. I don't mind the time and steps it takes to make them, though, because the end result is soooo good! We make these quite often and when we want to show off to guests who come over to watch football, we make these!
