    I say second best because there's a bar called Piper's Kilt in the Bronx that has the absolute best wings ever. I've eaten ALOT of wings in my days from all over. None come come close to Piper's Kilt. Alton Brown has come there. When I say 2nd it's a REAL close 2nd and 3rd is so distant that I don't even remember where 3rd was. I can tell that the vast majority of restaurants are not employing the steam/chill/bake method. I CANNOT stand rubber wings and AB has saved me. I just wish I had did these for the superbowl. A Giants win plus these wings and it would have been perfect. Although is sauce was great, I've been doing my own experiments but I really wish AB would do some "spying" and go to Piper's Kilt and try to replicate that sauce. But this recipe is THE BEST EVER. Ah hell, Piper's Kilt and AB Wings are a tie. (Still try to steal the sauce if you could AB lol

    I have had alot of chicken wings in my day (went to college in Buffalo and these are hands down the best non-fried wings I have ever had. Alton does it again!

    These were as good as any wing you get at a restaurant. And please, if I hear one more person say something to the effect "I'm from Buffalo, and only we know how to make wings" I'll puke!

    Clearly the other Buffalo reviewers did not actually make this recipe. They are crispy and tasty, but don't ooze grease like traditional buffalo wings.

    These are fabulous and easy to make - take it from a Buffalonian who knows wings!

    I have wanted to make chicken wings at home for awhile. I watched AB do it and it seems easy. Most of the reviews were positive so I decided to do it. SOOOO easy and my wife loved them. Boo hoo to the people rating this recipe down because they are not fried or not authentic Buffalo style. Who cares? The recipe is great and I recommend to all.

    I combed the web looking for a decent wing recipe. My bad. I should have known to go to Alton first. I tried and burned several recipes before I came to understand the SCIENCE behind the wings.

    Didn't make AB's sauce (used a bottle from BW3s, but his method for cooking the wings is perfect. Never would have thought of steaming first (used my large volume electric steamer instead of his steamer basket contraption, but they were crispy, delicious, and my kitchen was smoke-free!

    I've been looking for an alternative to fried wings. And these are great!! The sauce need additional hot sauce if you like them hot but they taste great the way they are.

    I had previously tried to make wings in the oven and had a very smokey experience. As a result, I never bought wings from the store again to make at home.
    It never occurred to me that one could render the fat away by steaming, so when I saw this episode, I figured I would give it another shot. Armed with AB enthusiasm, I even went so far as to create the 3 layered steaming contraption that was on the show. 3 steamers, a 1/4" threaded rod at 6" length, (6 1/4" nuts and washers, and I was ready to go.
    I cut the wings, placed them on the contraption, put them in a pot with water on the bottom and 10 minutes later removed the wings per the instructions. After cooling for an hour, they were ready for the oven. 40 - 50 minutes of baking @ 425 degrees, resulted in wings that were better than any other home wings I have had before.
    Recommendation: Try this; you will be impressed.
