    Wow! I make a pretty good wing. I broil mine on high. I started not to try this, because I thought it had a few too many steps for all the things I had to prepare for our Superbowl gathering. I'm so glad!! The wings were very moist inside and crunchy outside. I did use Frank's, butter, and sprinkled with some lemon pepper. DELISH!!! Leftovers reheated deliciously in oven. Thanks Alton.

    Great way to fix the wings, but I won't use the sauce again. It's too thin, I would just as well buy Franks Wing Sauce.

    I LOOOOVE wings, but am trying to be healthier and avoid that sick feeling fried food gives me. For the Superbowl Sunday, my husband fried wings for our guests and himself and I followed Alton's recipe for myself. I made my own wing sauce, but steamed the wings as directed and chilled them for an hour and then baked them. I LOVED them! I will ONLY eat my wings like this from now on. Flavor was delicious, crunch was satisfying, and no sick stomach feeling. I also tried a fried wing, just to compare and did not enjoy it the way I usually do. TRY this! You can do any sauce you want, but the steaming, chilling, and baking method is genius.

    sorry, but i have made several recipes from alton brown, now i avoid his, the last one i did was his homemade bacon, before that was his homemade kielbasa. if ya can't raise the bar, why post all these recipes. anyone else disappointed with alton?

    I had tested out another baked wings recipe before I tried this one and those wings ended up really dry. This recipe had so many high ratings I decided to give it a try and I'm very happy I did! The texture is incredible. This recipe created a perfectly crisp skin on the outside and very moist meat on the inside! It must be the steaming that makes the difference!

    I would give these wings a 10 star rating. I am on Atkins and I can eat these wings! My family are "wing crazy" Tried every recipe, go out for wings etc. WOW this recipe is by far the best ever! After I steamed them I found all the fat in the pot with the water, which would make them healthier too! and no deep frying or breading! I had a large tray of wings and only needed 1 dozen so after I steamed, dried and chilled them then I froze them in bags of 12. The next day the were so good I had to let my neighbor taste them so I took a pack out of the freezer I rinsed them to get the ice off and dried them, did not even defrost them, put them in the oven and 40 minutes later then were perfect! Unbelievable! Thank you Alton Brown! PS: Parchment paper works better than foil!

    Couple of tips for those attempting this recipe:
    1. I laid many of my wings on top of each other in the steamer so it is not necessary to have a flat row of wings.
    2. Be sure to pat the wings dry before putting them into the fridge.
    3. When taking the wings out of the fridge, take a paper towel and pat wings dry again. Mine had a little bit of gelatinous goop that had formed where the wings were in contact with the foil. I'm going to assume that this is fat coming out of the wing because I'm trying to eat healthier!
    4. Take wings out of fridge and dust them lightly with flour. I added 1 teaspoon to ~25 wings and shook in a large bowl.
    5. Spray non-stick oil onto your foil (important because otherwise the skin will stick to the foil and the delicious crispy skin will be stuck to the foil instead of in your stomach. Or use non-stick foil.
    6. Enjoy the best (and healthiest wings I've ever tasted! VERY crispy skin and moist, tender meat inside.

    Love these wings!! I made them for both the NFC Championship game and again for the Super Bowl. My fried-food-loving husband was skeptical about being able to obtain a crispy, well-cooked wing without frying....but he loved them!!!

    Well that did it. I had them eating out of my hands, err, bowl. Dang those were good. Only change I made was added a little vinegar to the sauce. Of all the food served at the Giants Super Bowl party the wings were the most talked about. Thanks Alton!
