I made this pie for a pie contest with my moms group. It took me tons of time and effort to gather the ingredients and the appropriate pan, etc. Fortunately I found the pan and pie bird pretty easily at Sur la Table. They keep them in stock but not online for $20 and the pie bird was $4 so much cheaper than online. Had to search for apple jelly and tapioca flour which was only at Whole Foods. I admit I didn't opt for the Grains of Paradise because it was going to cost $18 with shipping so I used a blend of cinnamon, nutmeg, cardamom, ginger and allspice. Didn't use much so it kept the integrity of the apple flavor. All that being said, the pie is certainly delicious! I'm not a huge apple pie fan but this recipe intrigued me so I went for it. The typical apple pie is too sickeningly sweet which is why I'm not such a big fan but this one is definitely all about keeping the integrity of the apple flavor and texture. I did have a little trouble with the crust. Made it the night before and it was a bear to roll out and had to do a lot of patching. When I cut into it, it was really crumbly even with the serrated knife. That may very well be my fault as I am not a pie expert by any means. In the end, I will definitely be making this again since I have all the ingredients on hand so it will be much easier. I think I may opt to buy that Grains of Paradise too since that could again make a big difference.

The pie just came out of the oven and it is gorgeous....the crust was very difficult to work with and required much patching. We can hardly wait till 6:30 to cut a big hunk out and dive in, will keep you posted.

no not a pun Alton, just curious if anyone added lemon juice to apples to stop them from browning while draining in colander for 90 mins.

I will say that some of the ingredients were a little hard to find, and the tart(quiche pan took two trips to Williams and Sonoma to aquire; but, It was all worth it in the end. It was by a wide margin the best pie I have ever made. the crust was PERFECT!!!!!! and the filling was all apple flavor (unique and refreshing. a few sugestions 1. It is always better to have too may apples than not enough. buy 5 lbs of apples and and adjust the spices to your taste. 2. the dough is sticky keep it cool and it will be easier to work with. 3 use Apple Jack in the filling, and start out with only half the apple jack for the dough. it can get too moist and will require more flour.

I love this apple pie recipe. I use a regular deep dish pie pan instead of the tart pan. Also, I do not use the pie bird and the pie still turns out perfect. The flavor of this apple pie is somewhat different than that of a regular apple pie, but it is very, very good. My husband really likes this pie. I especially enjoy the crust, it has a wonderful flavor and texture. The pie does take a while to make, but it is well worth the time. Everytime I make this pie, it is usually gone before the end of the day. This apple pie recipe is a keeper.

This pie, when done right is wonderful. It has so many apple elements to it that the end result is an apple lovers dream! It seems like it is a difficult recipe but it really isn't. It was a little time consuming but definitely worth it. I made it around Thanksgiving and my family said it was the best pie they've ever had. I did not use the special pan because they are somewhat expensive and it still turned out perfect. I also used the foil vent instead of a pie bird and it was fine. Also instead of buying a large bottle of the apple liquor, most stores know of a cheaper and smaller substitute that works just as well. I would highly recommend this recipe!

This pie was great but I have to admit that this type of tart pan was quite hard to find. Most tart pans are at least one inch tall and I looked online at many retailers to find a two inch tall nonstick tart pan. Amazon was the only online store I found this item but it was for $42. I finally found my two inch tall nonstick tart pan inside a Williams-Sonoma store for $25. It is NOT available on WS website or their catalog. Just thought you should know!

This was the first fruit pie I've ever made, and of course ended up making for Thanksgiving. The pie was super easy and turned out perfect. Even the bottom crust was nice and flaky. The apples were perfectly cooked. My family loved it even more then the one I usually buy from the bakery. Thanks for making me look good!
