I just made this last night. I didn't have tumeric so I used a little curry and i used Kalamata olives. It was extremely good and very easy. Also a very nice looking dish with all the colors.

I really loved this recipe. I substituted bulgur for couscous, cut the amount of shrimp in half, and added canned asparagus. DELICIOUS!

I didn't have any turmeric, so I improvised by subbing cumin (I know it's not a good substitute, but I liked the outcome used corn in place peas; omitted olives;
added sauteed mushrooms & garbanzo beans; after I tasted, it was still lacking some flavor for me, so I dumped in about 1 teaspoon each chili & coriander powder.
The resulting dish was far better then what I expected. Overall, I think it's a great great great idea for cooking a shrimp paella with couscous - the method is great as described, but for me, I'd omit dried thyme (or use fresh instead and I'd continue experimenting with extra spices.

I signed up for an account with food network just so I could give this recipe 5 stars. It is delicious, easy to make, and healthy. Everyone I have made it for or passed the recipe on to has loved it. It is a must try!

This is the first thing I have bothered to review and rate (i believe? on foodnetwork.com. I have tried many recipes but this was one of the easiest and most successful.
I added trader joe's chicken and basil sausage and 1 lb bag of scallops to this recipe. Because of the added meat I added an additional half cup of broth and an additional 1/3 cup of couscous. I didnt have tumeric but added some creole seasoning. this was so delicious and even had a bit of a sweet taste. this was so incredibly easy considering the result. My 15 year old nephew loved it.

This is an easy yet satisfying meal that is also low in fat and calories. And these are all ingredients that I almost always have on hand.

Served for a dinner party for 8 and made it after they got there. I admit I embelished. I added chorizo, scallops, mussels & chicken to make it more of a real paella. It was so easy and the couscous is what does it. I also used saffron, because I had it and chicken broth instead of water. Everyone loved it and wants the recipe.
