    This is a nice, simple, and fast, comfort food. Although I drained off much of the tomato water to use Lite Balsamic Vinaigrette and added Texas 1015 Onion, diced everything closer to 1/3 instead of 1/2 inch.
    Really is an enjoyable comfort food, next time, I might add diced Avocado. Two forks up.

    ....added red onion, tobasco, and a bit of ketsup like my gazpacho recipe and it was very good. A nice change from regular gazpacho. I will definitely make it again. Might try adding some shrimp next time

    This is a recipe I will make again & again. The gazpacho blend of veggies is so refreshing & pairs nicely with the hearty cavatap. I had no problem with the amount of celery and did not find the salad bland whatsoever; I used hot smoked paprika, which was nice b/c it was able to hold its own against all the garlic and there weren't a lot of other seasonings so it really stood out. Super-easy to prepare, I liked that it did not have a lot of ingredients but was lacking nothing. When I make this again very soon, I will serve some avacado slices and sour cream on the side.

    This pasta salad was absolutely delicious! I took it to a summer pot luck and got so many requests for the recipe. The tomatoes with chiles are a little spicy and the cucumbers are very cooling.

    This was a big hit at my son's graduation party. To make it a little more colorful, I used tri-color rotini. And I spiced it up a little more with Tabasco sauce because my family and most of our friends like food with a kick. The leftovers the next day were even better after the flavors had time to develop.

    It really amazes me when people who rate these recipes give them a low rating after changing the ingredients. You must be rating yourself! It is always good to make a new recipe exactly as written and then adjust the ingredients to suit your taste.
