This soup is great. It is, however, far better on day 2. It's easy, full of flavor and good for you as well.

This may be a "Polish" Kale soup, and it may taste good, but it is definitely NOT "Portuguese. Chourico and Linguica are used in a traditional Portuguese style Kale Soup, as well as Red Kidney Beans, occasionally potatoes, definitely not Marjoram, and no Chicken Stock. A true Portuguese Kale soup uses pork neck bones in the water based broth for flavoring. Also, I have never seen Portuguese Kale Soup made with rice. Occasionally with the differnt variations that family members have made, I have seen elbow macaroni.

Tried it like the recipe the first time and it was okay. Made second time with turkey smoked sausage, replaced the rice with barley, and the marjoram with thyme. Added 1 1/2 T balsamic vinegar. It won over the family. I keep making it again and again.

I tried this for the first time and was very impressed with how it turned out. Not much prep-work involved (especially if you purchase packaged kale already cleaned and chopped and was full of taste.
