    First time followed exact recipe directions. soup with the sausage was awful. Second time around husband said leave out sausage, so I did. Wonderful meal! still very filling with just the veggies. Have made quite a few times now it's a family favorite.

    This is a wonderful, easy recipe that is just as good in the summer as in the winter. It also freezes well--perfect for last minute dinners or snacks.

    We're low carbing, so we left out the rice, but this is a hearty, delicious meal in a bowl. We served the soup with grated parmesan for extra flavor.
