This is absolutely marvelous. Since I like to taste what I'm eating without searing my taste buds, I only used 1 Tbs. of chili powder and a few good grinds of black pepper instead of the cayenne. Will make this again and again, but might try a different herb each time instead of oregano - like thyme or rosemary. I find myself making a snack of the leftovers at night - better for me than a handful of potato chips!

I thought this was a great recipe. With all the different flavors of the veggies, one doesn't really miss the meat.

I have always said vegetables are not food, they are what food eats. This dish has changed my mind!!

This is my favorite vegetarian chili recipe. I make a big batch, then use the leftovers over potatoes or spaghetti, or wrapped in tortillas. Even my husband likes it! I reduce the oil to cut calories and can't taste a difference.

This meal was really good. I served it with low-fat sour cream and cheese. My husband had seconds... and he never has seconds of anything (especially something without meat!. I will definitely make this again. I think that I will use less chili powder next time and a little more salt.

This is the tastiest, cheapest, most wonderful recipe ever. It freezes well and is great for parties and pot lucks. Perfect for college students like me who have no money but love food.
I usually make the entire recipe, pour half into a separate pot to set aside for the vegetarians, then brown some ground turkey, chicken or beef and add it to the other half of the chili. This way everyone is happy. I love to serve it with sour cream and cheddar cheese.

I made this meal for my family as a project for my Spanish class, and it turned out great. It was so simple, and there was practically NO DISHES!! Thats always a plus. I didn't have the exact amounts of the beans, tomatoes, or corn, so I just adjusted the recipe a bit, but it was still great. I served it up with steamed rice, and a bit of shredded colby cheese on the top. Try It!
