This was so good! Begin one that is not fond of vegetables and to like a vegetarian chili with all these veggies was way better than what I thought it would be!

I made this today but simmered it in the crock pot on low all day. I also took a hand mixer and blended it a little bit to thicken it up. It was a big winner with my family. It's going in the "keep" file.

I prepared this recipe simply because it looked lovely on TV...but it is a knockout! I was floored at the delicious flavors, but also with its simplicity! A real winner!
