Ingredients
Cake:
- Nonstick cooking spray
- One 18 1/4-ounce package yellow cake mix, such as Dr. Oetker Organic Cake Mix
- 1/2 cup reduced-fat buttermilk
- 1 tablespoon canola oil
- 1 egg, lightly beaten
Filling:
- One 8-ounce package neufchatel cream cheese
- 3/4 cup confectioners' sugar
- 1/4 cup plain nonfat Greek-style yogurt
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Directions
For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-9-inch baking dish with nonstick cooking spray.
Place the cake mix, buttermilk, oil and egg in a large bowl and, using an electric hand mixer, blend together until smooth. Pour the mixture into the prepared baking dish.
For the filling: Beat the cream cheese until smooth. Beat in the sugar, yogurt, butter and vanilla. Spread over the cake mixture. Bake 40 to 45 minutes. You want the center to be a little gooey, so do not over bake.

I thought the cake was great. I've never had Paula's version; it has to be absolutely awesome!! I'm doing the Points Plus thing with Weight Watchers and cannot dare try it. I actually used fat free buttermilk in the cake and vanilla bean in the filling. I'll make it chocolate next time. I am a little confused on the serving size. At places it says serves 4 and others 16 servings (huge difference when counting points So...is the nutritional info based on 1/4 or 1/16 of the 9 X 9 pan?

Ok, first of all I used the recipe in Bobby's new book, which I just bought three days ago. It is slightly different from this recipe. At first, this recipe did not seem to be working at all. I had a hard time getting the cake to spread in the pan. I pushed forward anyway. This cake came out fabulous when it was done. I only had to bake about 35 mins. It's still even a little bit on the sweet side. The original cake is way over the top for me. I'm very happy with this. Can't wait to try some other made over recipes.

This cake is okay but not comparable to the original gooey cake at all. I will continue to make the original recipe and try very hard to limit myself to one piece at a time!
