You can create up to five timers

Ingredients

  • 3 to 4 teaspoons mayonnaise
  • 1 teaspoon curry powder
  • 4 chicken thighs, cooked and meat removed from bone
  • 5 slices white bread
  • Salt and pepper

Directions

Mix the mayonnaise and curry together. Chop all the chicken and mix with mayonnaise. Cut out circles with a small cup or cutters in white bread. Divide the chicken on the base of the white bread. Season with salt and pepper

    INot being a curry lover, I was hesitant to try this recipe. Perhaps curry is an acquired taste, and I've finally (after 70 years acquired it. These were delicious! Used a purchased rotisserie chicken to save on work, dark AND white meat. I increased the mayo to 4 Tbs. to compensate for the dryness of the breast meat, put them on potato bread, and added a small piece of lettuce to each sandwich. They were a big hit -- even with some of my friends who have trouble with spicy foods.

    This appetizer was dry at first and all I could taste was mayonnaise but after letting it sit in the fridge overnight the flavors soaked in, the curry flavor came through perfectly, and the chicken was not dry anymore! I thought it was especially delicious wrapped in lettuce. I will make this appetizer for my next party but I'll prepare it the night before.

    My family loves curry, but this appetizer was disappointing. It was dry even though I used tablespoons instead of teaspoons of mayonaise. Will not serve again.
