    This was the most interesting pie. i thought it deserved better so i used my oil crust recipe that doesn't need rolled for the crust. I loved it , my family rolled their eyes in confusion. i put a tiny bit of sugar and salt in the crust and found that it glowed this odd shade of yellow green the second day, the first day it appeared yellow. I found that the lemon flavor took over the second day , maybe a little better than the first day by a crumb, i served it at room temp with a dollop of whipped cream on the side. ill take it again to a family get together, it is a conversation piece, I loved it, thanks.

    Loved this! I really like lemon, so I was excited to try this recipe. I followed directions, but after tasting it, I wanted more lemon punch. I ended up adding the zest from 1.5 lemons and the juice of one lemon, plus about another tblsp of sugar and about 1/4 cup of flour to tighten it back up. It is Uh-mazing! Very creamy with just the lemony kick I was looking for, and it's healthful to boot. Sunny, please thank your grandmother for me. I'm a happy, happy girl.

    I made this recipe twice for Christmas Eve since it was so quick and easy. The original recipe was just too lemony for me, although my husband liked it a lot.

    Here is what I did for round two, and it was DE-LICIOUS!...

    Instead of 1 Tablespoon of lemon extract, I used:
    1/2 Tablespoon vanilla extract + 1/8 teaspoon cinnamon + 1/8 teaspoon nutmeg.

    EXCELLENT!! If you could imagine an Entenmann's coconut custard pie without the coconut, THAT'S what it tasted like! On a side note, I had to call it "Winter Spice Pie" because once people heard I was making a "squash pie," they wanted nothing to do with it. So I just told them that the squash pie was the lemon one, and that the other pie was something totally different. It went excellent warmed with dinner, but also tasted fantastic cold the next day!

    Can you say YUMMY!!!
    I made this last night and brought one into the office. Needless to say it was a hit.
    Many Thanks to Sunny and Grandma Williams for sharing this super easy pie.
    Now how about the fried chicken that we noticed sitting on the table. I would love to learn how to make fried chicken!!!

    Easy "as pie" with a "unique" taste. The pie has the consistency of pumpkin pie and it definitely takes on the lemon flavor. I can't help but think that something other than the lemon extract would be more suited for the squash. I think I will try the pie again with a different flavoring--maybe vanilla extract, cinnamon, nutmeg, allspice or some combo of these. Also, my blender is small so next time I'll use the food processor to blend the ingredients. I do appreciate the healthy ingredient.
