Ingredients

  • 1 avocado, peeled, pitted and diced
  • 1 head fennel, fronds removed and sliced
  • 1 grapefruit, segmented
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper
  • A few sprigs fresh parsley

Directions

Add the avocado, fennel, and grapefruit segments to a large bowl. Toss with olive oil and season with salt and pepper. Place onto platter and top with parsley. Serve with grilled shrimp, if desired.

    I love this salad!! Only deviation was that I added a teaspoon of dijon mustard and a tablespoon of honey to some Wegman's White Balsamic Vinegar dressing (already had herbs in it, shook that up in a container and poured it on. The salad was supposed to be a side dish with salmon and sweet potato, but we finished it all.

    The salt makes this dish ... be sure to use a good sea salt as well as your best olive oil. A spring favorite
