Finely grate 1 teaspoon of the zest from the blood oranges into a bowl using a rasp grater or lemon zester. Peel and segment the oranges (or slice into rounds) and add to the bowl with the zest. Add the feta, olives, olive oil, mint, oregano, jalapenos, cucumbers, onions and some salt and pepper and toss to combine. Taste and adjust the seasoning.
