Greek Salad: Horiatiki Salad

Ingredients
  • 1/2 small green bell pepper, chopped
  • 1/2 small red onion, sliced
  • 1/3 cup Kalamata or other brine-cured black olives, rinsed
  • 1/4 seedless cucumber, chopped
  • 1 cup cherry or grape tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons finely chopped fresh oregano
  • 2 teaspoons fresh lemon juice, or to taste
  • Salt and freshly ground black pepper
  • 4 thick slices feta cheese (about 8 ounces)
Directions
  • In a large bowl, toss together all ingredients except the feta. Put feta on 4 serving plates and spoon some of the salad over each. Serve.
