Ingredients
- 7 to 8 scallions, washed, dried and cut into slices (green and white parts)
- 1 small bunch chives, sliced
- Kosher salt
- Freshly ground white pepper
- 2 tablespoons water
- 8 tablespoons extra-virgin olive oil
- 2 pounds red bliss potatoes, washed
- 3 bay leaves
- 6 tablespoons red wine vinegar
- 2 shallots, peeled, quartered lengthwise, sliced thin
- 2 tablespoons smooth Dijon mustard
- 1 tablespoon chopped capers
- 1 teaspoon caper liquid
- 1 small bunch tarragon, stemmed and leaves finely chopped
Directions
In a food processor (or blender), combine the scallions and chives. Season with salt and pepper. Add water and blend. Pour 5 tablespoons of the olive oil through the top of the food processor in a slow, steady stream. Taste for seasoning.
Bring the potatoes to a boil in a pot of water and reduce to a simmer. Season the water with a pinch of salt and add bay leaves. Simmer the potatoes until they are tender when pierced with the tip of a knife, about 20 minutes.
In a bowl large enough to hold the potatoes, whisk together the red wine vinegar, shallots, mustard, capers and tarragon. Whisk in the remaining olive oil. Taste for seasoning. Drain the potatoes of their cooking liquid and discard the bay leaves.
Place the potatoes in the bowl with the dressing and lightly crush them with the tines of a fork. Season lightly with salt and pepper and toss them in the dressing. Finish by adding the scallion and olive oil mixture. Stir to blend. Keep warm at room temperature until serving.

I like the concept: fresh herbs and vinaigrette on warm red potatoes, but I will tweak it next time more like the TV version. I'll hand chop all the herbs skipping the food processor. I'll go lighter on the tarragon and capers. Do they go together? I didn't use shallots but there was plenty of onion flavor with the scallions and chives (especially pureed in the processor as they were. Finally, I would roughly chop the potatoes only fork smashing but a few. If you are looking for really green then go with this recipe as is. I like green, smashed is good, but green and smashed is tough to take.

This sounded interesting, but it turned out to be such an unappetizing disaster, that my husband and I threw it away. I expected greater competency from one of the most critical judges on "Chopped". Come on, folks.

I did not care for this recipe at all. I think it had to much of an onion taste to it.
