Ingredients
- 4 boneless rib-eye steaks, about 1-inch thick
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 4 teaspoons seasoned salt (recommended: Lawry's Seasoned Salt)
- 4 teaspoons all-purpose seasoning (recommended: McCormick's Season All)
Vidalia Onions:
- 4 large cloves garlic, finely chopped
- 8 tablespoons salted butter
- 4 teaspoons all-purpose seasoning (recommended: McCormick's Season All)
- 4 Vidalia onions, peeled and halved -not through the stem end
Directions
For the steak:
Rub each steak on both sides with some of the olive oil and seasonings. Grill over high heat, turning just once, to desired doneness.
For the onions:
Put some of the chopped garlic, 2 tablespoons butter, and a teaspoon of seasoning on the cut side of each of 4 onion halves. Top each with the another half. Wrap each onion completely in aluminum foil, and bury in the hot coals for about 10 minutes, until quite soft. Move to the grates to finish cooking, another 5 minutes or so. The onions should be golden and soft to the point of falling apart.

I couldn't wait to make these onions for my friends on Memorial Day because Bobby spoke so highly of them. Since I have a gas grill, I cooked them in the oven for 45 minutes and finished them on the grill. They still weren't very soft. I was so disappointed in the taste also. They were just very bland. Paula Deen's Saturday Night Vidalia Onions are hands down the better of the two recipes. Sorry Bobby!

The onions were a favorite but I had to microwave to get them really soft. They were also in the coals for way longer than 10 minutes--more like 20. And then on the grill for another 10. Maybe I didn't have enough charcoal.

I made Bobby Flay's New York steak and Blue Cheese recipe from this episode along with the grilled onions. I did not use Vidalia onions but other sweet onion. I believe it was a Texas Sweet. It was sweet, tender, buttery and so wonderful on the steak. Will be making this often.
