Ingredients

For Salsa:

  • 1 ear corn, roasted
  • 1 avocado, diced
  • 1/4 cup minced red onion
  • 1/4 cup minced red bell pepper
  • 1/2 teaspoon minced garlic
  • 2 dashes hot pepper sauce
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 3 tablespoons chopped cilantro
  • 1 tablespoon lime juice

Directions

Cut the kernels off the cob and mix together with all the remaining ingredients. Keep covered and refrigerated.

The recipe for salsa should not be made a day in advance, as the avocado will turn brown.

For Chicken:

  • 4 boneless chicken breasts
  • 1 cup lemon juice
  • Olive oil as needed
  • Salt and pepper

Preheat grill or broiler.

Season chicken with olive oil, salt and pepper. Brush with lemon juice. Grill 10 to 15 minutes total on a hot grill, turning 3 times. Serve with Avocado Corn Salsa.

    I liked this dish and will make it again. I made two mistakes: a left the chicken on the grill a little too long so it was a bit dry and overcooked; b I used three ears of corn, but didn't alter the lemon juice enough to counter the added ingredients...so the salsa was a little dry.

    It sounds like a really screwed up, doesn't it? Well, it was really good, and I know I'll do better next time.

    i made this for my family and they absolutely loved it! i don't believe that the lemon juice added much flavor to the chicken when it was on the grill but the salsa/relish was wonderful...very nice spices:

    I was looking for a recipe to make a great piece of grilled chicken breast, and this was very good. I liked that the instructions were plain and simple, no fancy words or comlicated rituals just to get the chicken seaoned! DELICIOUS!
