COMBINE jelly and balsamic vinegar in a mixing bowl. Whisk in oil slowly. Continue whisking until mixture comes together and thickens. Season to taste with salt and pepper.
ASSEMBLE the salad by dividing the salad ingredients evenly among four dinner plates. Begin with the lettuce, and then chicken strips, red onion, glazed pecans, grapes and finish with crumbled blue cheese. Serve salad with grape vinaigrette.
