Delicious and fresh! My family went crazy for it, it was a good way to get some spinach into the kids, and I didn't have to turn my oven on in the house on a hot day! Loved it and will definitely make it again, and might add some different vegetables such as zucchini, mushrooms, eggplant..

This was an easy, different recipe. But be sure to oil/spay the foil so it won't stick. We also used more basil and red pepper flakes than the recipe calls for -- a lot more.
