Really tasty. My family gave it a big "thumbs up"! We even thought it could serve as a main dish. Loved it!

This dish was AMAZING--my family all loved it. My youngest daughter asked if it was really "ALL we were having for dinner??" (wondering where the beef was, I guess! and also thought she would never eat a zucchini. Turns out, my kids had seconds--and on the zucchini, too! This was so easy , largely because you cut the food into large wedges before grilling, so there is very little prep. All the time is spent after grilling slicing everything to create what becomes a gorgeous, colorful, and delicious dish! I can't wait to make it for company, and easy to make vegetarian, too by omitting the salami.

Tried this last night. Forgot the scallions. It was quick and delicious. I'll make it again.
