I LOVE this dish. I agree with another reviewer, that I would cut the salt in the rub a little, though. The whole combination was amazing, and what is not to love about all of the textures in this dish. The layers of flavor are great too - savory, sweet, salty, bitter -- YUM! It was great for a weeknight dinner too.

Dry Rubs Work Best For A Quick Meal In My Thoughts. The Mustard Greens Minus Their Stems Are Lovely. Apples Are Always A Winner w/Pork. If Trouble With The Onion Rings Being Strong Or NOT Holding Batter~Two Ideas. Cut, Rinse With Cool Water & Dry With Paper Towels. Then Refridgerate About 15 Minutes. They Lose The Harsh Flavour And Hold Batter Quite Nicely.Chef,This Is A Lovely Dinner Or Lazy Brunch On A Week~End.Thank You.

I only made the onion rings. I've been trying to make onion rings at home for years. And have tried many different recipes and cooking methods. These were great! Crunchy, crisp, not at all soggy or greasy. Also, I didn't have buttermilk. Used whole milk and they came out fine.

This could be the best thing I've EVER eaten! I made just the pork chops, grinding the spices together, minus the pimento. The chop stayed moist, the spice flavors permeated the chops.
It is important to have a thick chop. I used my husband's great-greatgrandmother's cast iron
fry pan on a gas range, and put that into my gas oven. Voila!
Accompaning the chops were: steamed broccoli, fresh warm Macintosh applesauce
-nothing added-, and risotto made with just a half teaspoon of orange zest added at the end -delicious .

These were terrific pork chops. Raining so I used my cast iron. I would grill 4 minutes per side and cut the salt by a tad.

Watched Chef Falkner make this this morning and had to try it for dinner. Wonderful flavors that worked well together. Comes together fast and everyone loved it. Can be made gluten free with a gluten free flour for the onions.
