My girlfriend and I have had this recipe 3 times in the last month. We love it! It really comes together perfectly. We use the Fresh Goat Cheese Crumbles from Whole Foods (which is perfect because it isn't overwhelming.

This came together beautifully.... I didn't have a shallot on hand so I used two cloves of fresh garlic, increased the balsamic to three tablespoons, and topped the pork with sauteed mushrooms. I also added glazed walnuts to counter the spiciness of the arugula. What a hit!!!
Definitely a keeper!!!

I came across this recipe a couple of weeks ago and have made it about 4 times already. Absolutely delicious. I don't like blue cheese or gorgonzola so, substituted with goat cheese. I also didn't have fresh thyme so, I used fresh oregano I had growing in the yard. So easy and gets rave reviews from anyone who has tried it.

This dinner was awesome. Very easy to make. We cooked the chops on the grill b/c we didn't have a grill pan. The Kosher salt gave the pork a great taste and the dressing was FANTASTIC. I would have cut back a tiny bit of the shallot, but that was my personal taste. This is a dinner I would make for company because it looks like something you'd get in a nice restaurant!

This meal comes together beautifully and can be artfully presented. The flavor combinations are delicious and everything can be adjusted to taste. I felt no need to measure anything. Surprisingly light dish that packs a punch.

What a delicious and quick dinner. I loved the balsamic vinegar with the sweet grapes, salty pork and cheese. Will definitely make this again!
