This is an easy and fabulous tasting dish, the chicken melted in your mouth (my first organic chicken-and not at all a disappointment, worth every penny, and the sauce...ahh, the sauce. I used flour to make a rue, then used white wine to scrape the bits of chicken yumminess off of the pan that the chicken roasted in. The pesto was blended with that and I used half and half to thin it out, and a daub of butter for, well...just because. Don't bother to tell me how unhealthy this was, because I don't do this type of sauce making often. I have to say to all of the nay sayers of my sauce, this was without a doubt the best I have ever made, so very simply too.
Anyway, this recipe was amazing, and come this summer, I will do this on the grill using the pesto under the skin and a lemon stuffed inside, but in a "Beer Butt Chicken " pan using white wine as the liquid..I can't wait,because this pesto alone will make any chicken dish amazing!! Thank You Guy!!!!!

As Guy says, "that's the money!" It was awesome, specially the pan sauce. My family loved it! Not as hard as it looks.

Both my husband and thoguht this dish was lacking something it just felt flat to both of us. It could be that the recipe doesn't seem very complete. I will not make this again.

My husband LOVED this... he said it was the best chicken he has ever had. I cooked it breast side down and flipped it over for the last few min. to brown the breast skin. I also used spinach instead of arugula, just because I didn't have any! I served it with smashed cauliflower and served the gravy (with sauteed mushrooms over the top of both. Guy is the BEST!!! I have to tell you, ORGANIC chicken makes all the difference!!!

We made this over the weekend and loved it. It does make a lot of sauce so we might cut that back a bit but will definitely be making this again

I made this chicken for dinner tonight and it was excellent. The chicken was so moist and full of flavor and the sauce was fantastic. I'm a huge fan of pestos anyway, but this one is a keeper. The only place I deviated from his recipe was instead of all arugula, I made the pesto with half basil and half arugula I also don't really see the need for the lemon juice but I did put it in. I recommend you try this. Its easy, healthy and a very pretty presentation..
