    I followed the recipe exactly. It was easy & delicious !! The entire family LOVED it !
    You just have to make sure you cook the beets early enough in the day, and leave in frige until you are ready to put the salad together
    Definitely a keeper.

    Buy the beets already cooked. I don't recommend canned. The dressing is well-balanced and tasty. Easy and good.

    Thanks Guy, The tarragon dressing was just what I needed! Used
    several colors of baby beets with the goat cheese and it was a
    must do again.

    Very good! The beets are the star, and they are delicious. I chose to use my own simple vinaigrette of red wine vinegar and olive oil because I don't like tarragon. I also warmed the goat cheese in a skillet. A very light dusting of bread crumbs makes this possible. The warmed goat cheese puts this salad over the top.

    Made for St. Patrick's day dinner-used baby spinach, mache & arugula (love to use mache for St. Patty's because it looks like clover leaf, used already roasted beets from Trader Joes (huge time saver & delicious!, eliminated the onions - salad was a HUGE hit! Delicious!!

    I've never had beets before I tried this recipe, and they were much better than I thought. The goat cheese and tarragon dressing paired well with the roasted beets. Great use for beets, and will definately make this again!

    I loved the dressing on this!! I also threw on a piece of smoked salmon and it made for a delicious lunch!
