The dressing makes it incredible. I normally use fried goat cheese for my salads and took it to new heights this time. I browned the pine nuts and put them in the food processor and added to the bread crumbs with fresh thyme. Sliced the beets on top of the salad and topped each slice with warm fried goat cheese. What a keeper any season of the year.

Try this awesome salad. Taste the dressing you might want to add more olive oil. After you dice up the beets, it doesn't hurt to add some more salt and pepper and a healthy pinch of sugar. This will balance out all the rice wine vinegar in the dressing.

Yum Yum Guy! I have to admit I dislike beets, but my husband loves them, so I made this salad for him and substituted the beets with avocados for myself. Fantastic flavors.

As Guy would say, "This is off the chain!!!" I did not roast the beets as long as he said, 25-30 minutes seemed long enough. It became an instant hit with my beet-loving husband!!

OUTSTANDING! EVERY SINGLE COMPONENT WAS PERFECT! THE DRESSING ENHANCED THE FLAVORS OF THE BEETS AND GOAT CHEESE AND THE PINE NUTS ADDED A WONDERFUL CRUNCH ALONG WITH THE RED ONIONS. REALLY GREAT SALAD AND STILL ANOTHER GREAT GUY RECIPE! HONESTLY, THERE IS SOMETHING SPECIAL ABOUT ROASTING YOUR OWN BEETS THAT JUST MAKES THIS SPECIAL. ALSO, (I LEARNED FROM THE DR. OZ SHOW BEETS ARE GREAT FOR YOUR BRAIN! SO ENJOY (AND I KNOW YOU WILL AND EVEN IF YOU ARE ONLY DOING IT FOR TASTE...FEEL GOOD THAT IT IS ALSO A SUPERFOOD FOR YOUR BRAIN BECAUSE OF THE 'NATURAL' NITRATES'WHICH INCREASE BLOOD FLOW TO YOUR BRAIN. I followed the recipe exactly. It was easy & delicious !! The entire family LOVED it !
You just have to make sure you cook the beets early enough in the day, and leave in frige until you are ready to put the salad together
Definitely a keeper.

Buy the beets already cooked. I don't recommend canned. The dressing is well-balanced and tasty. Easy and good.
