I don't know why this has such high ratings. It is boring and vinegary. I did not like it and neither did my husband! Wish I would have combined the ingredients fresh with olive oil so I could actually taste the corn. Even tried the lime juice to try to 'fix' it... no luck! Do not recommend.

I love recipes where ingredients called for are simple and what I happen to have on hand. I have to admit that I didn't have the snow peas, but I was able to use left over ears of corn I had in the fridge. Nice flavors, and picky boyfriend was surprised it was better than he expected.

Had some grilled corn left over from the 4th, so decided to try the recipe. Followed the recipe with the reviews in mind. Add some lime juice and after it all cooled, cut up 2 tomato and chilled. Turned out great! The black beans texture little crunchier than desired, next time saute longer! Thank you Guy!

this is an amazing side dish! the flavors are wonderful & my kids love it! definitely let the mix sit for a bit before serving - gives those flavors time to mingle & become outstanding. perfect for a cookout! i've made this a few times & everytime people are so amazed that they love it so much!

I love the simplicity of this recipe although after I tasted it, it needed some thing, couldn't figure it out so I came to the reviews and am going to add the lime juice and tomato, I think that'll put it over the top. Whenever I need a good recipe for church potlucks or everyday dinners or special occasions I go to Food Network and especially Guy's site. Thanks for all the inspiration, as where I live we don't have a grocery store so we learn to make due with what we have and your recipes are pretty easy to follow, albeit some of the ingredients have to have substitutions but it always works out. Thanks again, I am a big fan :

Looking for a quick salad to go with bbq? Well I did and this did one the trick. I used canned corn and I added a whole jalepeno (chopped and sauted it with the onions. One quick taste and I know it was missing something, some zip so I added the juice of 1/2 a lime and DONE!

Caveat: I made this recipe for a family Christmas dinner, adjusting/multiplying the recipe to feed 25. My rating is based on those adjustments until I make the recipe again.

I truly loved this recipe! It's super fresh and easy! However, I would make some adjustments. I like a little more "umph" in my salad so I added extra vinegar and put in 1/4-1/2 cup of lime juice. I also added some extra salt to back the flavor up a bit. Because I wanted the flavors to marry, we left it in the fridge overnight. The flavors married perfectly, but I will be leaving the snow peas out next time and add them right before serving as a garnish (they turned and ugly brown/green. We also added about 2 cups of halved grape tomatoes, and they were a great addition. Next time I'll be adding some feta cheese as well.
Overall, this recipe is one of my favorites and will be a staple of mine!

I have made this a least a dozen times. Everytime I make it, I get outstanding compliments. Not only do I serve it as a salad. I serve it next to the salsa and guacomole. The day I serve it I chop and add about 2 tb. of cilantro. Yum!
