This was some beautiful desert! I followed the recipe exactly except I didn't bake it in a cast iron pan, just a regular 13x9 glass pan. My cooking time was longer to get a light brown top, and even then, it's a bit doughy, but ohhhhhhhhhhhhhh it tastes great!. I probably had less peaches (3 very large and more blueberries (2 pints but it worked out fine. The sugar was just right.
I only had light rum, but I had a tiny bottle of peach schnapps, so I made up my 1/4 cup with half of each. You can't really taste either , but the flavor IS strong of the fruit and so good you have to moan a bit. Thanks Guy, this is a good one!
